Everything You Need to Know About BBQ Brisket

In most southern states, bbq brisket is a delicacy when it is cooked right. The key is to getting the flavor, temperature, time, and cut of meat all in perfect harmony. It sounds more difficult than it is, but it can take several tries to cook a delicious bbq brisket that is moist and flavorful.

The first thing to consider for the bbq brisket is the cut of the meat. It is widely agreed that the brisket should be untrimmed. It is the layer of fat on top of the brisket that will help keep it moist during cooking. The best place to go is straight to the butcher. Look for a cut that is deep red in color and has a lot of marbling. This will also add to the tenderness of the bbq brisket.

It is very important to cook bbq brisket slowly. This means cooking at a low temperature for a very long time. The brisket should be placed in the smoker with the layer of fat on top. The low temperature will cause the collagen in the meat to break down and tenderize the meat. That important layer of fat will also drip to keep the meat moist as it cooks. If the bbq brisket seems to be drying out, then it is ok to wrap it in foil to finish the cooking. The brisket is done when it reaches 195° Fahrenheit.
